Fajita Spiced Tofu

Ingredients⁠

  • 2 cups Brown Rice, cooked

  • 1 tbsp Extra Virgin Olive Oil, divided

  • 250 grams Firm Tofu, pressed and crumbled into large pieces

  • ½ packet Taco Seasoning Mix, divided

  • 1/3 cup Water

  • 1 Green Capsicum, diced

  • 150 grams Baby Spinach, chopped (equivalent to 1 cup)

  • 2 tsp Tamari (or soy sauce)

  • 1 Lemon, juiced

Method⁠

  1. Prepare the brown rice according to the instructions on the package if it's not already cooked.

  2. Heat 1/3 of the olive oil in a non-stick pan over medium heat. Add the crumbled tofu and cook for 8-10 minutes or until the tofu is browned. Sprinkle half of the taco seasoning and half of the water over the tofu. Transfer the tofu to a plate and set it aside.

  3. Add the remaining olive oil to the same pan and cook the diced green capsicum for 3-5 minutes or until it becomes tender. Add the other half of the taco seasoning and water to the pan and fry for one minute. Then, add the chopped baby spinach and stir until wilted. Return the browned tofu to the pan.

  4. Stir in the remaining taco seasoning and tamari, ensuring everything is well combined.

  5. In a bowl, serve one portion of cooked brown rice. Store the remaining portion in a container. Top both portions with the fajita spiced tofu mixture and drizzle lemon juice over the top. Enjoy one serving immediately and refrigerate the other serving until ready to eat, as per the meal plan
