Berry Mango Baked Oats

Ingredients⁠ ·       

  • 1/3 cup Unsweetened Coconut Yoghurt (for batter)

  • 80 ml Unsweetened Almond Milk

  • 1 ½ tsp Maple Syrup

  • ½ tsp Vanilla Extract

  • 1/3 cup Rolled Oats

  • 30 grams Frozen Raspberries (reserve a small amount to serve)

  • 30 grams Frozen Mango or Fresh (reserve a small amount to serve)

  • 1 tsp Unsweetened Coconut Yoghurt (to serve)

Method⁠

1.      Preheat the oven to 180C. Grease a baking dish.

2.      In a bowl, add the yoghurt, milk, maple syrup and vanilla extract and combine well. Then stir the oats in.

3.      Pour the oat mixture into the baking dish, sprinkle the berries and mango over, then gently press into the surface. Bake for 40-45 minutes or until top is golden and firm to touch.

4.      Serve with a sprinkle of extra berries, mango and a teaspoon dollop of yoghurt.

Notes

No coconut yoghurt, use plain Greek yoghurt or lactose free option.
