Spicy Garlic Chickpeas

Serves 6 | Time 15 minutes

Ingredients⁠

  • Canned organic chickpeas x 1, drained and rinsed

  • Olive oil x ¼ cup

  • Sea salt x 1 tsp

  • Chilli powder x ½ tsp

  • Cumin x ½ tsp

  • Paprika x ¾ tsp

  • Garlic powder x ¾ tsp

  • Onion powder x ½ tsp

  • Cayenne pepper x ¼ - ½ tsp , your choice depending how hot you like it

Method⁠

  1. Preheat oven to 220° C.

  2. Place chickpeas in a paper­ towel-lined strainer. Allow to air dry for 10­-15 minutes.

  3. Place chickpeas in a bowl, drizzle with olive oil, stirring to coat. Then place on lined baking tray and sprinkle with ½ tsp sea salt.

  4. Bake in oven for  20­-25 minutes, stirring every 5 minutes or so, until golden brown. (Some of the chickpeas may start popping).

  5. While chickpeas cook, in a bowl stir together remaining sea salt, cayenne, chili powder, cumin, paprika, garlic powder, onion powder and cayenne.  Toss hot chickpeas in spice mixture. Serve and enjoy immediately for best results.
