Spicy Garlic Chickpeas
Serves 6 | Time 15 minutes
Ingredients
Canned organic chickpeas x 1, drained and rinsed
Olive oil x ¼ cup
Sea salt x 1 tsp
Chilli powder x ½ tsp
Cumin x ½ tsp
Paprika x ¾ tsp
Garlic powder x ¾ tsp
Onion powder x ½ tsp
Cayenne pepper x ¼ - ½ tsp , your choice depending how hot you like it
Method
Preheat oven to 220° C.
Place chickpeas in a paper towel-lined strainer. Allow to air dry for 10-15 minutes.
Place chickpeas in a bowl, drizzle with olive oil, stirring to coat. Then place on lined baking tray and sprinkle with ½ tsp sea salt.
Bake in oven for 20-25 minutes, stirring every 5 minutes or so, until golden brown. (Some of the chickpeas may start popping).
While chickpeas cook, in a bowl stir together remaining sea salt, cayenne, chili powder, cumin, paprika, garlic powder, onion powder and cayenne. Toss hot chickpeas in spice mixture. Serve and enjoy immediately for best results.
