Asian-Style Mushroom Omelet

Serves 1 | Time 15 minutes

This nutritious and flavorful omelette is a perfect choice for a protein-packed meal, with a delightful combination of savory mushrooms, crunchy coleslaw, and refreshing bean sprouts, all brought together with a tasty tamari and maple syrup dressing.

Ingredients⁠

  •   ½ tsp Tamari (or soy sauce)

  • ½ tsp Maple Syrup

  • 2 tsp Extra Virgin Olive Oil

  • 50 grams Brown Mushroom, thinly sliced

  • 2 Eggs, whisked

  • 100 grams Coleslaw Mix

  • 25 grams Bean Sprouts

Method⁠

  1. In a small bowl, combine tamari and maple syrup. Set aside.

  2. Heat half of the olive oil in a frying pan over medium-high heat. Add the sliced mushrooms and cook for 2-3 minutes until tender and golden. Transfer the mushrooms to a plate.

  3. In the same pan, heat the remaining olive oil over medium-high heat. Pour in the whisked eggs, swirling to coat the base of the pan. Sprinkle the cooked mushrooms over half of the omelette and cook for 1-2 minutes until almost set. Sprinkle the coleslaw mix on top of the mushrooms, then fold the omelette over and transfer it to a plate.

  4. Serve the omelette with bean sprouts on top and drizzle the dressing over it.
