Thai Basil Beef Stir Fry

Ingredients⁠

·         2 tsp Extra Virgin Olive Oil

·         600 grams Beef Strips

·         260 grams Broccoli (florets, chopped)

·         1 Red Capsicum (sliced)

·         4 tsp Tamari (or soy sauce)

·         2 tsp Fish Sauce

·         2 tsp Lime Juice

·         1 bunch Basil (chopped)

Method⁠

1.      In a frying pan over medium-high heat, add the oil and then the stir-fry beef strips. Cook for 5-10 minutes or until browned, stirring occasionally.

2.      Add the broccoli and capsicum to the pan and cook until slightly softened, about 4-5 minutes.

3.      In the meantime, add the tamari, fish sauce and lime juice to a small bowl and stir to combine.

4.      Add the sauce to the pan and toss to combine. Remove the pan from the heat and add the basil. Divide one serving into a bowl and the other into an airtight container for lunch the next day; enjoy!
