Brown Rice Salad
Serves 2 | Time 10 minutes
Ingredients
120 grams Brown Rice (1/4 cup cooked per person)
150 grams Baby Spinach (50 grams is 1 cup)
225 grams Cherry Tomatoes (halves)
1 Avocado (diced)
3 tbsp Capers
30 grams Feta Cheese (crumbled)
1 tbsp Balsamic Vinegar Glaze
Method
Cook rice, according to packet instructions, or heat rice if using precooked rice.
Combine spinach, tomatoes, avocado, capers, and cooked brown rice in a bowl. Crumble feta over the top. Drizzle with balsamic vinegar. Season with salt and pepper.
Serve the salad with a squeeze of lemon
