Greek Style Bean Salad

Ingredients⁠

  • 200 grams Feta Cheese (cut in half and down the middle)

  • 1 tbsp Ground Cumin

  • 2 tsps Italian Seasoning

  • 2 cloves Garlic (minced)

  • 1 tbsp Extra Virgin Olive Oil

  • 1 Lemon (juiced)

  • 1 Red Capsicum (thinly sliced)

  • 1 Red Onion (halved and thinly sliced)

  • 420 grams Cannellini Beans (drained and rinsed)

  • 420 grams Mixed Beans (drained and rinsed, 4 bean mix)

  • 1/4 cup Parsley (flat leaf, leaves picked)

Method⁠

  1. In a small bowl, combine the spices with olive oil, lemon juice, and minced garlic. Add the feta, coating both sides evenly. Set aside.

  2. Heat a frying pan over medium heat. Once hot, add the feta and cook for 3-5 minutes on each side or until golden. Set aside while preparing the rest of the salad.

  3. In a large bowl, combine the thinly sliced capsicum, halved and thinly sliced red onion, cannellini beans, and mixed beans.

  4. Top the bean mixture with the cooked feta and sprinkle the parsley over the salad.
